Pulinkari (South Indian Tamarind Curry)

Pulinkari ek traditional South Indian tamarind-based curry hai jo Kerala aur Tamil Nadu dono regions me pasand ki jati hai. Is recipe me tangy tamarind, soft vegetables, aur coconut-based masala ka perfect balance hota hai. Ingredients
  

  • 1 cup tamarind extract
  • 1 cup ash gourd cubed
  • 6 –8 drumstick pieces
  • 2 tbsp coconut oil
  • 1 tsp mustard seeds
  • 1 tsp fenugreek seeds
  • 1 pinch asafoetida
  • 10 –12 curry leaves
  • 1 tsp red chili powder
  • ½ tsp turmeric powder
  • Salt to taste
  • 1 tsp jaggery optional
  • For the Spice Paste
  • ½ cup fresh coconut
  • 1 tbsp roasted chana dal
  • 1 tsp fenugreek seeds
  • 2 –3 dried red chilies
  • Water as needed

Method
 

  1. Tamarind ko garam pani me bhigo kar uska extract nikal lein aur strain kar ke side me rakh dein.
  2. Cooking pot ya earthen pot me coconut oil garam karein. Mustard seeds dal kar crackle hone dein. Fenugreek seeds, asafoetida, aur curry leaves add karein.
  3. Ab ash gourd aur drumstick dal kar 5 minutes halka sa saute karein jab tak vegetables thodi soft ho jayein.
  4. Iske baad red chili powder, turmeric powder aur namak dal kar ache se mix karein.
  5. Tamarind extract dal kar curry ko ubalne dein. Phir heat kam kar ke 10–12 minutes tak simmer hone dein.
  6. Dusri taraf blender me fresh coconut, roasted chana dal, fenugreek seeds aur dried red chilies thoda pani dal kar smooth paste bana lein.
  7. Ye spice paste curry me dal kar mix karein. Jaggery add karein agar use kar rahe ho. 6–8 minutes aur pakayein jab tak gravy thick ho jaye.
  8. Final tempering ke liye choti pan me coconut oil garam karein, mustard seeds aur curry leaves dal kar curry ke upar dal dein.
  9. Gas band kar ke 2 minutes cover kar ke rest dein, phir serve karein.

Notes

Earthen pot me banane se Pulinkari ka flavor zyada deep aata hai.
Tamarind ki quantity taste ke mutabiq kam zyada kar sakte hain.
Ye curry agle din aur bhi tasty lagti hai.
Bilkul vegan aur digestion-friendly recipe hai.
