- Prepare the Seafood: Pat the scallops very dry with paper towels to ensure a good sear. Slice the fishcakes into uniform strips.
- Make the Sauce: In a small bowl, whisk together the soy sauce, oyster sauce, rice vinegar, sesame oil, and sugar. Set aside.
- Sear Scallops: Heat 1 tablespoon of oil in a wok or large skillet over high heat. Sear the scallops for 1-2 minutes per side until golden brown. Remove from the pan and set aside.
- Cook Vegetables: Add the remaining 1 tablespoon of oil to the same pan. Add the bell pepper, snow peas, and broccoli. Stir fry for 3-4 minutes until crisp-tender.
- Add Aromatics: Add the minced garlic, ginger, and sliced fishcakes to the pan. Stir fry for another 1 minute until fragrant.
- Combine and Sauce: Return the scallops to the pan. Pour the sauce mixture over the ingredients. Toss everything together for 1-2 minutes until the sauce thickens and coats everything evenly.
- Serve: Remove from heat immediately. Garnish with chopped green onions and sesame seeds. Serve hot over steamed jasmine rice.
