- Prep the Radishes: Wash the radishes thoroughly and trim off the leafy tops and root ends. Using a sharp knife or a mandoline, slice the radishes into thin rounds.
- Pack the Jar: Place the optional aromatics (mustard seeds, peppercorns, garlic) at the bottom of a clean glass jar. Pack the sliced radishes tightly into the jar.
- Make the Brine: In a small saucepan over medium heat, combine the water, vinegar, sugar, and salt. Stir the mixture gently until the sugar and salt have completely dissolved (about 1-2 minutes).
- Pour and Cool: Pour the hot brine carefully over the radishes in the jar, ensuring they are fully submerged.
- Chill: Let the jar sit at room temperature for 30 minutes to cool. Cover with a lid and refrigerate. They are ready to eat once chilled but taste best after 24 hours.

Storage: These pickled radishes will keep in the refrigerator for up to 2-3 weeks.
Serving Suggestions: Add to tacos, burgers, salads, or charcuterie boards for a zesty crunch.
Variation: For a spicy kick, add a pinch of red pepper flakes to the jar.
