Ingredients
  

  • 2 ¼ cups all-purpose flour
  • 1 teaspoon baking soda
  • ½ teaspoon salt
  • ¾ cup unsalted butter softened
  • ¾ cup brown sugar
  • ½ cup granulated sugar
  • 2 large eggs room temperature
  • 2 teaspoons vanilla extract
  • 2 cups Guittard Super Cookie Chips semi-sweet

Method
 

  1. Preheat the oven to 350°F (175°C). Line a baking sheet with parchment paper.
  2. In a medium bowl, whisk together flour, baking soda, and salt. Set aside.
  3. In a large mixing bowl, beat the butter, brown sugar, and granulated sugar until light and fluffy. This takes about two minutes.
  4. Add the eggs one at a time and mix well after each addition. Stir in the vanilla extract until smooth.
  5. Slowly add the dry ingredients to the wet mixture. Mix on low speed just until combined. Do not overmix the dough.
  6. Fold in the Guittard Super Cookie Chips gently using a spatula.
  7. Scoop the cookie dough onto the prepared baking sheet, leaving space between each cookie.
  8. Bake for 10 to 12 minutes until the edges are golden brown and the centers look slightly soft.
  9. Remove the cookies from the oven and let them rest on the baking sheet for five minutes. Transfer to a cooling rack to cool completely.

Notes

For extra chewy cookies, chill the cookie dough for 30 minutes before baking.
Sprinkle a little sea salt on top before baking for a sweet and salty flavor.
Do not overbake. Cookies continue to firm up while cooling.
