Method
- Preheat the oven to 350°F (175°C). Line a baking sheet with parchment paper.
- In a medium bowl, whisk together flour, baking soda, and salt. Set aside.
- In a large mixing bowl, beat the butter, brown sugar, and granulated sugar until light and fluffy. This takes about two minutes.
- Add the eggs one at a time and mix well after each addition. Stir in the vanilla extract until smooth.
- Slowly add the dry ingredients to the wet mixture. Mix on low speed just until combined. Do not overmix the dough.
- Fold in the Guittard Super Cookie Chips gently using a spatula.
- Scoop the cookie dough onto the prepared baking sheet, leaving space between each cookie.
- Bake for 10 to 12 minutes until the edges are golden brown and the centers look slightly soft.
- Remove the cookies from the oven and let them rest on the baking sheet for five minutes. Transfer to a cooling rack to cool completely.
Notes
For extra chewy cookies, chill the cookie dough for 30 minutes before baking.
Sprinkle a little sea salt on top before baking for a sweet and salty flavor.
Do not overbake. Cookies continue to firm up while cooling.
