Ingredients
  

  • Dough
  • 1 cup Warm milk 110°F/45°C
  • 1 packet Active dry yeast 2 ¼ tsp
  • ½ cup Granulated sugar
  • cup Unsalted butter melted
  • 1 large Egg room temperature
  • 4 cups All-purpose flour
  • ½ tsp Salt
  • Filling
  • ½ cup Unsalted butter softened
  • 1 cup Brown sugar packed
  • 2 ½ tbsp Ground cinnamon
  • Cream Cheese Icing
  • 4 oz Cream cheese softened
  • ¼ cup Unsalted butter softened
  • 1 ½ cups Powdered sugar
  • 1 tsp Vanilla extract
  • 1-2 tbsp Milk for consistency

Equipment

  • Stand mixer (with dough hook)
  • Large Mixing Bowl
  • Rolling Pin
  • Sharp knife or unflavored dental floss
  • 9x13 inch baking pan
  • Pastry Brush
  • Measuring Cups and Spoons

Method
 

  1. Activate Yeast: In a small bowl, dissolve 1 tbsp of sugar and yeast in warm milk. Let it sit for 5-10 minutes until frothy.
  2. Mix Dough: In your stand mixer bowl, combine the yeast mixture, remaining sugar, melted butter, egg, and salt. Gradually add flour until a soft, tacky dough forms.
  3. Knead: Knead on medium speed for 5-7 minutes until the dough is smooth and elastic.
  4. First Rise: Place dough in a greased bowl, cover with a warm towel, and let rise in a warm place for 1 hour or until doubled in size.
  5. Prepare Filling: While dough rises, mix brown sugar and cinnamon in a small bowl.
  6. Roll & Fill: Punch down the risen dough. Roll it out on a floured surface into a 12x18 inch rectangle. Brush with softened butter and sprinkle evenly with the cinnamon-sugar mixture.
  7. Shape: Tightly roll the dough into a log starting from the long edge. Cut into 12 even rolls using a sharp knife or dental floss.
  8. Second Rise: Place rolls into a greased baking pan. Cover and let rise for 30 minutes until puffy. Preheat oven to 350°F (175°C).
  9. Bake: Bake for 20-25 minutes until golden brown.
  10. Make Icing: Whisk cream cheese, butter, powdered sugar, vanilla, and milk until smooth.
  11. Serve: Drizzle icing generously over warm rolls and serve immediately.
